This soup stays a consistent meal in my home. I make it once a week for its strong detoxification properties. Lentils are full of B vitamins, magnesium, and zinc, essential vitamins and minerals for a healthy gut microbiome, a functioning immune system, and glowing skin. Keep these ingredients stocked in your kitchen for an easy and nourishing meal.
Ingredients
- 2 carrots, medium
- 5 cloves garlic
- 1 lemon, zest and juice of small
- 1 1/2 cups red lentils
- 2 white onion, medium
- 6 cups vegetable stock
- 1 can coconut milk
- 1 tsp curry powder
- 1 tbsp turmeric
- 3 tbsp miso paste
- salt and pepper to taste
- 1 tbsp chili oil
- 2 tsp Cumin, ground
Instructions
- Sauté the veggies. Sauté the onion, carrots, and garlic in the olive oil.
- Simmer. Stir in the vegetable stock, lentils, and spices until combined. Cover and cook until the lentils are tender.
- Blend. Using a blender, puree the soup with the coconut milk and blend until it reaches your desired consistency.
- Season. Stir in the lemon zest and juice. Then season the soup with a few generous pinches of salt and pepper as needed.
- Serve. Serve warm, garnished with an extra lemon slice, cracked black pepper, and a drizzle of olive oil.
